In addition to what you guys pointed out, there’s also the more obvious difference right in the quote: Homer’s mom never would’ve said that to him, although his dad probably would. I guess they had little to no idea what kind of character she would be back then. I’m kind of surprised it took them so long to do an episode about her, really.
They’ve said in countless interviews and commentaries that they had nothing planned from the beginning. There was no series bible, no overarching ideas for things to be revealed later – they just made everything up as they went along. Mike Reiss has said that when fans ask him about continuity errors like this, his answer is always “We don’t care.”
